  • Dry your chickpeas well! Excess moisture will leave you with soggy chickpeas rather than crispy.
  • Make sure your chickpeas are spaced out well. If you are doubling the recipe, use two sheet pans. If the chickpeas are too close together, they will steam rather than roast.
  • Bake the chickpeas on a bare baking sheet rather than on a parchment paper linedbaking sheet. This will also help maximize crispiness! You can also use a large cast iron skillet.

A: No! In fact, I think the skin is the best part. When you are drying the chickpeas, gently squeeze them to separate the skin. The skin gets extra crispy and flavorful in the oven, so I don’t recommend discarding it.

A: Store leftovers in an airtight container in the fridge. You can reheat the chickpeas in a skilletor in the oven, although they are just as delicious straight from the fridge.

Ingredients
  

  • 1 can garbanzo beans (drained, rinsed, dried thoroughly)
  • 2.5 tbsp avocado oil
  • 1 tbsp maple sugar
  • 1 tbsp pure maple syrup (reserved for serving)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp fine sea salt

Instructions
 

  • Preheat your oven to 375 F.
  • Pour oil on a bare baking sheet and add all ingredients besides the maple syrup.
  • Bake for 25 minutes, flipping halfway through.
  • Remove from the oven, add the maple syrup, toss, and serve.
